Roasted Red Pepper Soup
Ingredients:
3 – 4 Red peppers (depending on size)
1 small onion
I clove garlic (optional)
Low Salt Vegetable Stock (or just make normal stock quite dilute)
1 tbsp Olive oil
Cut peppers into thick strips (perhaps 6-8 sections per pepper) and onion into quarters and toss in a bowl with the olive oil. Spread out on a baking tray (tuck in the clove garlic unpeeled if using) and roast at the top of the oven on a low heat until soft and slightly browning (about half an hour or so).
Once cooled slightly, pull off the skins of the peppers, squeeze out the garlic and take out any tough bits of onion. Do not be too particular, it doesn’t matter too much as will be blended, just makes the soup have a few less ‘bits’ in it! Add enough stock to just cover the peppers or it will be too watery and blend until its smooth. That’s it!
Foodie Tots Tip: Red peppers are an excellent source of vitamin C so great for immune boosting food. They are also high in B vitamins for energy production and brain health. Best to buy these organic if you can as their high water content means they are more likely to absorb herbicides and pesticides whilst growing.
