Roasted Sweet Potato Cubes
Ingredients:
1-2 sweet potatoes (depending on who you are feeding)
1 tbsp Olive oil
Peel sweet potatoes and cut into bite-sized cubes or chunks. Place in a mixing bowl, add the olive oil and give it all a good toss around to coat the cubes. Lay out on a baking tray so potatoes are not piled on top of each other. Roast in a fairly hot oven close to the top for 15-20 minutes depending on size of chunks until tender when poked with a knife. That’s it! They work very well with an oven roasted piece of salmon and can be cooked on same tray for same length of time, served with broccoli or green beans.
